Every October and November, Alba bends to a single perfume. The International White Truffle Fair fills two months with Michelin-star events and more than a hundred cooking shows, and the whole of the Langhe seems to hold its breath.
Beyond the spectacle, it is a chance to meet the people behind the food — the trifolao and his dog, the chefs, the producers — and to taste how a territory expresses itself when its rarest ingredient comes to the table.
