Why the table — not the itinerary — is where a journey really happens.
Conviviality is the ancient art of cum vivere: living together. It is, quietly, the heart of everything I design.
At a good table, knowledge circulates as freely as the bottles. Producers, cooks and travellers talk; a place stops being a backdrop and becomes a shared experience. Yes, tasting happens — but so do thinking, laughing and listening.
This is what I mean by sustainable tourism: not consuming a place, but entering into relationship with it, one meal at a time.
